I aim to unite environmental health with human health by investigating the impact of soil health on the nutrient quality of common garden crops. Healthy soils contain more organic matter, making them more absorbant and able to provide more water to plants with less irrigation. It is known that healthy soil increases the protein and mineral content of crops, but what about all the other vitamins? Through my research, I hope to futher elucidate factors that control the production of nutritionally relevant plant secondary metabolites, such as the cancer-preventing molecule, sulforaphane, found in broccoli and its cruciferous relatives.
